Sausage with vegetables

Sausages and vegetables are a great combination.  They are economical, tasty and filling. Try this dish for a change from your usual recipes.  This works well cooked in the oven or a slow cooker.  So if you like to put all your ingredients together and just leave it then this recipe does the trick. 


Sausage and vegetable casserole
Serves 6


Ingredients
400g pork sausage (beef sausage will work just as well)
3 turnips (baby turnips are best but if you can’t get baby turnips use normal turnips as an alternative)
2 small carrots peeled and diced
2 large potatoes peeled and diced into mouth size pieces
150ml stock
1 Small can chopped tomatoes (if you have classic plum tomatoes remove the core and chop thoroughly)
2 tblsp Olive oil or vegetable oil for cooking
Salt and pepper to taste
1 flat tablespoon fresh basil

Method
Heat 1 tablespoon of olive oil in a pan and cook the carrots, potatoes and turnips gently for about 3-5 minutes until just beginning to soften but not brown.
Wash and chop the fresh basil and add to the pan.
Add the chopped tomatoes and pour in the stock.  Cook through for 5 minutes. 
Turn the mixture into an ovenproof dish and set aside.
Cut the sausage into pieces
Heat 1 tablespoon of olive oil in a frying pan. Add the sausage pieces and gently fry the sausage until just turning brown.  Place in an ovenproof dish.
Place the ovenproof dish in the oven on a medium heat for about 1 hour or until the casserole is cooked through. 

All oven temperatures vary so if you aren’t familiar with your oven or you want to be sure that your sausage are cooked  then invest in an oven thermometer.  They are fantastic little devices to have and can be used in the oven, on the stove top or for testing meat on your barbeque.  I think the handiest of these has a probe that can be inserted into the meat at the start of cooking and left inserted into the meat for the whole duration of the cooking time.  You tell the thermometer what type of meat you are cooking e.g. Pork, beef, chicken etc. You can even choose rare, medium or well done!  And the thermometer is preprogrammed with the correct temperatures. The alarm will go off alerting you when the correct temperature is reached. This gives you peace of mind that your meat is cooked through.
