Beef Sausage with lentils Beef sausage make a fantastic casserole. Choose between traditional beef sausage or low fat beef sausage for a healthier option. Buy them online to be delivered fresh to your door and use good quality fresh vegetables. You can substitute any of these vegetables with your favourite variety or use seasonal vegetables.
Beef Sausage with Lentils Serves 6 Cooking time 1¾ - 2 hours Medium heat
Ingredients 3 Tblesp vegetable cooking oil 500 gms Beef sausage, diced into bite size pieces 2 carrots cut into small bit size pieces 1 large onion sliced 100gms red or green lentils 1 tin of chopped tomatoes 500ml fresh stock ½ tsp powdered mustard ½ tsp Worcester sauce 1 tblesp of fresh basil chopped or ½ tsp dried oregano 1 bay leaf Squeeze of lemon juice Salt and pepper
Method Put the cooking oil into a large frying pan and gently heat the oil. Add the sausage and fry until just brown. Put the drained sausage in a large earthenware casserole dish. Add the onion and carrot to the frying pan and cook gently until soft and transparent. Add the onion and carrot to the sausage in the casserole dish. Add the stock, lentils, chopped tomatoes, herbs, lemon juice, Worcester sauce, powdered mustard and salt and pepper to the frying pan and bring to the boil. Simmer for 5 minutes and then pour over the sausage in the casserole dish. Cover with a lid and put in the oven. Cook for 1¾ - 2 hours. Just before serving remove the bay leaf and taste.
Serving suggestions:
Basmati rice This casserole tastes great served hot with a bed of basmati rice and green salad.
Baby new potatoes Serve with new season fresh baby potatoes and any type of green bean.
Jacket potato Serve with crisped oven baked Maris piper jacket potatoes and small fresh or frozen petit pois. Add a green salad served in a side dish for extra crunch!
Chips Great with children and hungry workers! Serve the casserole with golden chips and a small sweet corn on the cob. Add a ripped portion of French bread and real butter. Mmmm!!
