Sausage Man
Beef Sausage with chilli

Give your beef sausage a Mexican flavour with a casserole made with beef sausage, kidney beans and chilli.  Hot and spicy, serve with boiled, basmati or crunchy brown rice.
 


Chilli Beef Sausage
Serves 4-6


Ingredients
400gms beef sausage
1 large onion sliced
1 medium green pepper seeded and sliced
2 sticks celery sliced into thin pieces
1 tsp chilli powder
1 tsp dried mixed herbs
1 clove garlic crushed
425gms chopped tomatoes
425gm tin kidney beans
Vegetable oil for cooking
Salt and pepper to taste


Method
Add the oil to a large frying pan and gently cook the onion, green pepper, celery and garlic for about 3 minutes.  Transfer to an ovenproof dish.
Add the sausage to the pan and cook on a medium heat for about 5 minutes browning on all sides.  Transfer to the ovenproof dish. 
Add the herbs, chopped tomatoes, kidney beans and chilli powder to the ovenproof dish and cook in the oven for about 1¾ hours or until cooked.
Serve piping hot with rice and a green side salad.


Serving suggestions:

Rice
Serve with boiled fluffy white rice, basmati rice or brown rice.  Brown rice has a slightly nutty flavour and is crunchier than white rice.
If cooking rice isn’t your strong point it may well be worth investing in an electric rice maker.  They are easy to use and not too expensive.  The rice will be perfectly cooked every time with virtually no effort.  You can find them online or at your high street electrical store.  More expensive models have digital timers with delayed start times. Cheaper models will have just a basic timer with no frills.  If you’re not sure which model will suit you check out some forums for advice and tips. 

Salad
Salad is a refreshing accompaniment to any type of chili. Serve your salad with a crispy lettuce and cherry tomatoes. 

Pitta bread
Serve warmed pitta bread cut into strips or leave whole to stuff with chilli.
